One of the beautiful things about having kids is making more than one meal to fit everyone's tastes. Tonight I decided that hubby and I would have steak, while the two little ones ate fajitas. So far, it seems to have worked out well as the kids were both yelling "mine!!" when they saw me putting the fajitas together in the kitchen!
To start out making these dishes, you'll first need to gather your ingredients.
For the steak dinner:
~Steak (obviously! lol! - the trick is to get a better cut for a more tender steak. I tend to buy really inexpensive meats. To give you a clue, I bought two pounds of steak here for $4.00 That is what I used for our dinner tonight. These can be made with any type of steak).
~Steak rub (I mix about 1/2 tsp paprika, 1/2 tsp cayenne, 1 Tbs black pepper, 1 Tbs salt, 2 Tbs onion powder)
~Worcestershire sauce
~Olive oil
~Garlic (if desired)
~Canned, refrigerated Biscuits (cooked according to pkg directions) on the side
~Green Beans (these were leftover - use your favorite side veggie or a salad!)
To season the steak, douse with Worcestershire sauce, and using your fingers, rub the seasoning into the steak itself. Do this on both sides.
Drizzle olive oil in a frying pan on the stovetop, with heat set to medium/med-hi (my range goes from 1-10, and i usually put it on the 6).
Once the oil is heated, gently lay steaks in pan, allowing them to cook. At this point, if you like garlic, you can spread fresh minced garlic across the top of the steak.
Let steak cook most of the way through on this side. Do not turn until you are completely finished browning the first side on medium heat.
When you flip the steaks, just let them rest over the heat, cooking on the new side until the steak is finished. Dont keep flipping it, or pushing the juices out of the steak. You want it to remain juicy and tender! :) Right around when you flip the steak is a good time to start the biscuits in the oven, and start cooking your vegetables.
When your steak is finished, biscuits are done, and veggies cooked, you will now have a tasty, hearty dinner!
If you want to make fajitas with your leftover steak (or if you want to make some for the kids!), you'll need to gather a few more ingredients.
For the Fajitas:
~Flour tortillas
~Shredded Cheese
~Salsa (optional)
~Sour Cream (optional)
~Guacamole (optional)
~tomatoes, peppers, onions, lettuce (whatever veggies you will eat to top your fajita!)
Slice the steak very thin (about 1/4-1/2" wide strips). Set aside.
Warm tortillas in the microwave, and top with cheese.
Add steak & vegetables. Then top with any additional condiments/toppings desired! Eat flat (as pictured) or fold in half for a tasty taco!
