Easy Peasy cookie recipe if you happen to have a ready made cake mix on hand. Mix two eggs and 1/2 cup oil (or applesauce for a lower fat content) into the mix. Mix well, scoop out onto you cookie sheet and bake t 350 until done (for my oven it's aout 15 to 17 minutes) We do this all the time and you can bake as is, throw in some chips or nuts, or just put in some sprinkles.

Pumpkin spice cookies: 1 can of pure pumpkin and a spice cake mix: mix together, drop round spoonfuls and bake at 350 for 8-13 depending on size. They don't spread so how you drop 'em is how they look. A little smear of cream cheese frosting if you like it and you're done!
